Chef Salad
Ingredients
- 6 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon shallot minced
- 1 clove garlic minced
- 1/2 teaspoon dried thyme
- salt and freshly ground black pepper
- 1 cucumber peeled, halved lengthwise, seeded, and sliced into 1/4 inch pieces
- 3 romaine hearts torn or cut into bite-sized pieces
- 3 radishes trimmed, halved lengthwise, and thinly sliced
- 1 pint grape tomatoes or cherry tomatoes, halved
- 8 ounces deli ham 1/4 inch thick, julienned
- 8 ounces deli turkey 1/4 inch thick, julienned
- 8 ounces cheddar cheese 1/4 inch thick, julienned
- 4 hard-boiled eggs peeled and quartered
Instructions
- In a medium bowl, whisk together oil, vinegar, shallot, garlic, thyme, ½ tsp. salt, and ¼ tsp. pepper. Add the cucumber and marinate for 15 minutes.
- Meanwhile, in a large bowl combine lettuce, radishes, and tomatoes. Add marinated cucumbers with dressing and toss until evenly coated.
- Arrange ham, turkey, and cheese on top of the vegetables. Top with hard-boiled eggs.
