- In a heavy saucepan over medium-high heat, heat butter until foaming. Whisk in flour until smooth.
- Gradually add chicken broth and whisk constantly to prevent lumps. Bring to boil, reduce heat, and simmer until reduced by half (about 20 minutes). Season to taste with salt and white pepper.
- OPTIONAL: For the smoothest veloute sauce, strain through a fine-mesh strainer lined with cheesecloth.
