Apple Crumble
Ingredients
For the topping:
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup butter cold, cut into 1/4-inch cubes (1 stick)
For the apple crumble:
- 2/3 cup granulated sugar (5 ounces)
- 2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 8 medium tart apples such as Granny Smith, peeled, halved, cored, and sliced 1/4-inch thick (about 8 cups or 2 pounds)
- Vanilla ice cream for serving, optional
Instructions
To make the oatmeal streusel topping:
- In a large bowl, stir together oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Using a pastry blender or two knives, quickly cut or rub the butter into the flour mixture until it is crumbly.
- Cover and refrigerate while you prepare the filling (maybe be refrigerated for 2 weeks or frozen for up to 3 months). There is no need to thaw before use.
To make the apple crumble:
- Adjust an oven rack to the lower-middle position and preheat to 350 degrees. Coat a 2-quart oval or 9-inch x 13-inch rectangular baking dish lightly with nonstick spray.
- In a small bowl, whisk together sugar, cornstarch, cinnamon, and salt. To the prepared baking dish, add apple slices. Sprinkle with sugar mixture and toss to coat. Sprinkle the topping evenly over the apples.
- Baking until the apples are tender when pierced with a knife and the topping is crisp and golden brown, about 40 to 50 minutes. Serve warm with vanilla ice cream if desired.
Notes
Apple-Cranberry variation: Add one cup of fresh, thawed, or frozen cranberries to the prepared baking dish with the apples.
