Cucumber Mint Cooler

Ingredients
  

  • 1 Seedless cucumber unpeeled, cut into cubes
  • 3/4 cup fresh mint leaves loosely packed
  • 6-8 tablespoons granulated sugar to taste
  • 2 Limes
  • pinch Salt
  • Fresh mint, lime wedges, or cucumber slices for garnish
  • Cold water or sparkling water

Instructions
 

  • Add cubed cucumber, mint, and sugar to the jar of a high-powered blender. Zest the limes right into the top of the blender. Then juice the zested limes and add the juice along with a pinch of salt.
  • Cover the blender and blend at high speed until the mixture is completely puréed. Make sure the pulp is really mashed up.
  • Gauge the amount of mash you have in the blender, then measure out an equal amount of water (still or sparkling) and add to the blender. Pulse or stir to combine. Taste and adjust sugar, if needed.
  • Serve over ice with lime, cucumber, or mint as garnish.

Notes

The long, seedless (English-style) cucumbers work best. If using a standard seeded cucumber, peel away about half of the skin and scoop out the seeds, as they can be bitter. If using smaller Persian cucumbers, use several.
