Blueberry Dessert
Ingredients
For the crust:
- 9 graham crackers crushed
- 1/4 cup granulated sugar
- 6 tablespoons butter melted
For the filling:
- 8 ounces cream cheese softened
- 1/2 cup granulated sugar divided
- 2 eggs
For the toppping:
- 1 (20 ounce) can blueberry pie filling
- 1 container Cool Whip
Instructions
- Preheat oven to 375 degrees.
- In a food processor, or in a plastic bag with a rolling pin, finely crush graham crackers.
- In a medium bowl, combine graham cracker crumbs, butter, and 1/4 cup of sugar. Pour into a 9 by 9-inch baking dish, using the bottom of a measuring cup to press the crust evenly and firmly into the bottom and up the sides of the pan.
- Bake crust until golden brown, about 6 to 9 minutes.
- Meanwhile, in a medium bowl, whisk the softened cream cheese and 1 cup sugar and mix until smooth. Add eggs to the mixture, one at a time, and mix until smooth.
- Remove the crust from the oven and reduce the heat to 325 degrees. Pour the filling over the crust. Bake until the filling is set, about 35 to 40 minutes. Cool completely.
- Spread the blueberry pie filling over the cooled dessert. Chill 2 to 3 hours. Serve with whipped cream.
