Ingredients
  

  • 8 ounces cream cheese room temperature
  • 1/3 cup granulated sugar
  • 2 egg yolks room temperature
  • 2 tablespoons ricotta cheese
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1 (17.3 ounce) pkg frozen puff pastry thawed (see note 1)
  • 1 egg beaten with 1 tablespoon water

Instructions
 

  • Preheat oven to 400 degrees. Prepare a baking sheet by lining with parchment paper.
  • In a standing mixer fit with the paddle attachment, or with an electric mixer on low speed, cream cream cheese and sugar on low speed until smooth. Once creamed, continue on low speed and add egg yolks, ricotta, vanilla, salt and lemon zest. Mix until combined.
  • On a lightly floured surface, unfold 1 sheet of pastry puff and roll out until the sheet measures 10 inches by 10 inches. Cut the sheet into 4 squares.
  • Drop heaping tablespoons of the cream cheese mixture onto the center of each square. Brush each of the corners of the squares with the egg wash. Fold opposite corners of the pastry over and brush the overlapping corners with egg wash to ensure they firmly stick together. Brush the top of the pastries with egg wash and place on the prepared baking sheet. Repeat with the second sheet of puff pastry.
  • Refrigerate the filled pastries for 15 minutes. Bake the pastries until puffed and golden brown, about 20 minutes.

Notes

  1. Thawing puff pastry: thawing times may vary. Pastry should unfold easily but still be cold. To thaw at room temperature, remove the puff pastry sheets from package. Thaw until it unfolds easily, no more than 40 minutes. 
  2. Make ahead: danishes can be made in advance. Filled danishes can be stored in the refrigerator overnight, and baked the next day.
  3.  Reheating: to reheat the danishes, preheat oven to 350 degrees. Place danishes on baking sheet and bake until warm, about 5 minutes.
